Shelli’s Quarantine Cooking Zucchini Bread


½ cup white sugar

1 cup brown sugar

3 cups all purpose flour

3 eggs

1 cup veggie oil (we use safflower)

2 teaspoons vanilla extract

1 teaspoon nutmeg

3 teaspoons cinnamon

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

2 -3 cups zucchini, grated and blotted-with-paper-towels to get out the moisture

1 cup chopped walnuts


Preheat oven to 325.

Pam up two loaf pans.

Mix together the flour, salt, baking powder, baking soda, nutmeg, & cinnamon.

In a separate bowl, mix together the eggs, vanilla,and sugar, and then add to dry mixture & beat well.

Stir in the grated zucchini and the walnuts.

Pour batter into the loaf pans.

Bake 35-40 minutes until an inserted knife comes out clean.

Eat warm, cold, or freeze in individual slices!
