Shelli’s Quarantine Cooking Salmon With Fresh Dill Sauce

(My favorite salmon recipe!!!)

Ingredients:

Fresh salmon- steak or piece, whichever you prefer

½ container of 5% plain Greek yogurt (about 3.5 oz)

At least a quarter cup chopped fresh dill

Juice from ¼ fresh lemon

Emeril Southwestern rub (recipe follows)

Salt & pepper

Directions:

Pre heat oven to 475. Yes, you read right.

Pam up a baking sheet and after washing & drying the salmon, place on the sheet, skin side down.

Top with some Southwest rub (to taste).

Then top each piece with 2-4 ice cubes.

(my mom taught me the ice cubes keep the fish moist without the added calories of olive oil or butter)

Cook 20-30 minutes (I like it well done with the skin all crusty. Yum!)

Directions for the dill topping:

Mix the fresh dill, lemon juice and salt & pepper with the yogurt. Top on plated fish.

Emeril Southwest Rub:

(just mix all ingredients together & store in fridge. Great on chicken, fish and in meatloaf.)

2 tablespoons chili powder

2 teaspoons ground cumin

2 tablespoons sweet paprika

1 teaspoon ground black pepper

1 tablespoon ground coriander

1 teaspoon cayenne pepper

1 teaspoon crushed red pepper flakes

1 tablespoon salt

1 tablespoon dried oregano
