Shelli’s Quarantine Cooking Pork Chops With Balsamic Sweet Onions

Ingredients:

4 pork chops (We like rib chops)

¾ teaspoon kosher salt

½ teaspoon ground pepper

1 tablespoon olive oil

1 large thinly sliced Vidalia onion

1 teaspoon fresh cut-up thyme or ¼ teaspoon dried thyme

½ cup chicken broth (add less kosher salt if your broth isn’t salt-free)

½ cup water

3 tablespoons high-quality balsamic vinegar

1 tablespoon chopped fresh parsley for garnish, if you like

Directions:

Preheat oven to 200.

Open windows or door!! It’s gonna get smokey!!!

Lightly sprinkle both sides of the chops chops with salt & pepper.

Heat oil in cast iron pan over medium-high heat.

Sear the chops on both sides until they are a nice dark golden brown. (About two minutes per side)

Turn down the heat to medium and cook until meat thermometer reads 140.

Transfer pork to oven on a tray or aluminum foil to keep warm.

Add onions and thyme to hot pan and cook for a minute while stirring.

Add broth & water, stir the drippings from the bottom of the pan, and cook covered for 5 minutes, until the onions are done and the water is evaporated.

Stir in balsamic vinegar & scrape all the bits again.

Bring to a boil and cook until thickened. (Very quick)

Remove pork chops from oven and top with onion/balsamic mixture.

Garnish with the parsley and serve.
