Cookin On The Q With Shelli yam souflee


2 pounds yams, peeled and chunked

½ cup butter

1 teaspoon cinnamon

¼ teaspoon nutmeg

½ teaspoon salt

1 cup brown sugar

2 tablespoons white sugar

3 large eggs, separated

½ cup oj

1 tablespoon orange rind

½ cup evaporated milk

Big ass marshmallows


Heat oven to 450.

Beat eggs whitesuntil stiff and place in separate bowl.

In mixer, cream hot yams with butter, spices, salt and sugars until smooth.

Beat in eggs yolks andthen stir in oj, milk and rind.

Fold ineggs whites by hand

Put in pammed upbig-ass pie dish orlow casserole.

Add marshmallows on top

Bake at 450 for 10 minutes then reduce heat to 350for 30 more minutes until it puffs up in middle.

You will never need a pumpkin pie dessert again.This tastesjust likepumpkin pie, minus thecrust.
