Shelli’s Quarantine Cooking Grilled Pound Cake With Fresh Strawberries

(Actually, it’s John’s recipe. He made it as a surprise for me for our 3 year-5-month-wedding anny!!)


Pint of fresh strawberries (buy local if you can, they’re in season. In fact, it’s a great activity with the kids at a local pick-your-own-farm.)

1 cup plus 1 teaspoon sugar

16 tablespoons room temp salted butter

2 cups unbleached flour

4 large eggs

1 ½ teaspoons baking powder

½ teaspoon salt

½ cup non-skim milk at room temp

1 teaspoon vanilla extract


4-5 hours before you make the cake, slice strawberries in half.

Add ½ teaspoon sugar to the strawberries and mix well.

Add another ½ teaspoon sugar and mix again.

Pre heat oven to 350.

Pam up a 9 x 5 inch loaf pan.

In a large bowl, beat the butter until very light.

Beat in the sugar gradually and add the eggs, one egg at a time.

Scrape the bottom & sides of bowl and beat mixture well.

In a separate bowl, whisk together the flour, baking powder & salt.

In another bowl, whisk together the milk & vanilla extract.

Alternately add the wet & dry ingredients to the butter/sugar/egg mixture, starting & ending with the flour. Stir to combine after each addition.

Pour the batter into loaf pan, smoothing the top.

Bake 30 minutes.

Tent the top of the cake with aluminum foil.

Bake another 25-30 minutes until the top is lightly golden brown.

Insert knife. If it comes out clean, it’s done.

Remove cake from oven and loosen edges. Wait 5 minutes, then carefully turn out of pan onto rack to cool.

Grilling directions:

Heat cast iron pan on low-medium heat, with just half of the pan directly on the flame.

Slice the number of pieces that you want to grill. (About 3/4” works great.)

Liberally butter both sides of the cake.

Place the slices of pound cake on non-flame side.

Flip ‪after 1-2‬ minutes. Should be golden brown on both sides.

Top with strawberries.

Wait until you taste!!!
