It seems that all food trends start in LA. Poké, avocado toast, kale all started in LA. But for those in LA who have some made up condition called a "gluten allergy", they apparently don't know how to just suck it up and say, "Ok, I'll enjoy this bitter kale salad". No they have to ruin the most perfect of dishes. Pizza isn't exactly something that needs reinventing. New York perfected it and there's no reason to screw with perfection. Oh!
Now, I'm a fan of cheese. Don't get me wrong. I love cheese. Parmesan, Gouda, Brie, American Cheese, Pecorino Romano, Cheddar, Manchego, Smoked Gouda, Camembert, they're all my friends. But a pizza made entirely out of cheese isn't pizza. It's cheese with toppings.
Chef Vito Iacopelli, a popular chef in LA-LA-Land, is making something he calls the Mo Pizza, at Prova, the pizzeria he opened. It's a 10-inch round, thin wheel of mozzarella that he then puts toppings on. Again, that's not pizza!
The very definition of pizza is crust, sauce, cheese, and topping. There's no crust!! This isn't pizza!! It's a monstrosity!!
