Cooking On The Q with Shelli

Best homemade marinara sauce ever!!!

Ingredients:

250 cherry tomatoes (or 4 pounds of Roma or San Marzano tomatoes)

12-15 garlic cloves

1 tablespoon dried oregano (or equivalent fresh)

1 tablespoon Italian seasoning

3/4 teaspoon salt

1/2 teaspoon pepper

2 tablespoons olive oil

3 ounces of tomato paste

Directions:

Wash all tomatoes, cut each in half, and put in a big-ass bowl.

Mince garlic.

Sauté garlic until lightly brown.

Pour the olive oil over the tomatoes.

Add the oregano, seasoning, salt, and pepper.

Add the minced garlic.

Mix well by hand.

Pam up a roasting pan.

Pour the tomatoes into the pan.

Roast at 425° for 40 minutes, or until they have all popped.

Allow the tomatoes to cool for ten minutes.

When tomatoes are cooled, put into your cuisinart.

Add 3 ounces of tomato paste and blend.

Taste. If desired, add a little more salt or seasoning.

Pour the sauce into a bowl.

Makes 4 cups of sauce.
