Shelli’s Quarantine Cooking So-Easy Baked Chicken Thighs with Fresh Lime, Mayo, & Mustard

Ingredients:

8 boneless/skinless chicken thighs

4 tablespoons Dijon mustard

1 tablespoon plus 1 teaspoon mayo

3 minced cloves of garlic

Zest and juice from 1 fresh lime (make sure it’s on soft side)

¾ teaspoon pepper

Salt

Directions:

Preheat oven to 400.

Pat-dry the chicken. Do not wash!

In a small bowl, whisk together mayo, garlic, mustard, lime zest, lime juice, garlic & pepper.

Place chicken in a large pammed up pyrex baking dish and generously salt.

With washed hands, apply the mayo mix on both sides of chicken.

Bake 40 minutes or until your meat thermometer hits 165.

If it needs more browning, put under the broiler for five minutes.

Pull, and let rest.

Drizzle pan juices on chicken before serving.
