Shelli’s Quarantine Cooking Miso Cod
(adapted from Nobu)
Ingredients:
3 tablespoons mirin
6 tablespoons sake
½ cup white miso paste
1/3 cup sugar
6 pieces cod fillets, about 1 ½ inches thick
Safflower oil for grilling
Directions:
In a small saucepan, combine the mirin and sake, and bring to a boil.
Turn down to medium.
Whisk in the miso until dissolved.
Add the sugar and cook, whisking until just dissolved.
Allow the marinade to cool.
Transfer the marinade to a large baking dish.
Add the fish and turn to coat on all sides.
Cover and refrigerate overnite.
Next day:
Preheat oven to 400.
Heat a griddle, pam up, and add a tablespoon of oil.
Scrape the marinade off the fish.
Add fish to griddle and cook over high heat until browned, about 2 minutes.
Flip the fish onto pammed up baking sheet and roast for around 10 minutes.
