Shelli’s Quarantine Cooking Meatballs
Ingredients:
1 pound ground pork
1 pound ground turkey
1 pound lean ground beef
2 beaten eggs
4 cloves chopped garlic
1 sweet chopped onion
Almost 1 cup Italian breadcrumbs
1 tablespoon Italian seasoning
1 teaspoon dried oregano
½ teaspoon salt
Pepper to taste
¼ cup chopped fresh parsley
½ cup grated parmesan/romano cheese blend
4-5 cups of great fresh sauce/gravy or a high-quality jar, like Rao’s or Big Pussy’s.
Directions:
Simmer sauce/gravy on stove.
Add all of the rest of the ingredients to a big-ass bowl and after washing your hands, hand mix thoroughly.
Form like-size meatballs. (one Facebook Live listener suggested using an ice cream scooper!)
Place meatballs in sauce and cook until 165 internal degrees. We cook more than an hour, usually forgetting while they’re softly simmering.
Cool, then refrigerate.
Best cooked at least one day ahead.
Lots to freeze. (We freeze in the portions we would use for a dinner.)
