Shelli’s Quarantine Cooking Caesar Salad

Ingredients:

¾ pounds chicken breast cut into strips (easiest to cut if semi-frozen)

Romaine lettuce

2 celery stalks, cut up

1 avocado, cut up

Grape tomatoes

For dressing:

3 cloves garlic

2 egg yolks

2 tbsp fresh lemon juice

1-1/2 tsp Dijon mustard

1 tsp anchovy paste

Kosher salt

Black pepper

1/4 cup grated Parmesan/Romano cheese

1/4 cup olive oil

Directions:

Heat oven to 375.

Pam up sheet pan and place salt & peppered chicken strips. Bake around 25 minutes or until done. Internal temp must be 165 degrees minimum.

In Cuisinart, combine yolks, lemon juice, salt, pepper, grated cheese, mustard, garlic, & anchovy paste. Then drizzle in olive oil very slowly.

Mix romaine lettuce with avocados, tomatoes, and celery in a big-ass salad bowl. Thoroughly mix in dressing.

Plate, and top with chicken. Just one warning about morning-after side effect: burping from raw garlic!!!
