Shelli’s Quarantine Cooking Salad

Ingredients:

Lettuce (I usually use romaine or a spring mix)

2 stalks cut up celery

½ pepper (I prefer red, orange or yellow)

1 whole cut up avocado

Chopped red onion

Grape tomatoes (If buying from store now, get the grape. They’re sweet. Best to wait til summer when the local tomatoes are in)

Handful of walnuts

Goat or blue cheese (Best if you crumble your own. Pre-crumbled at store not as tasty.)

Salt & pepper

1 tablespoon olive oil

2 tablespoons high quality balsamic vinegar (Buy the highest quality you can. Sooo much tastier. We like a Cask 10.)

Directions:

Mix the veggies in a big-ass bowl.

Add walnuts, salt, pepper, and crumbled cheese then toss with the olive oil & balsamic vinegar.

Just to annoy Jim Kerr, you can add cut up boneless thighs (or breasts).
