Shelli’s Quarantine Cooking Curried Chicken With Cauliflower & Red Grapes

Ingredients:

1 head cauliflower cut up into small pieces

6 boneless/skinless chicken thighs

7 ounces full fat plain yogurt

5 teaspoons curry powder

3 tablespoons olive oil

2 ½ teaspoons kosher salt

1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme

¼ teaspoon black pepper

1 cup red seedless grapes with each one cut in half

Directions:

Pre heat oven to 425.

Pat dry chicken thighs but don’t run under water.

Mix 2 tablespoons of the yogurt, 2 tablespoons of olive oil, 4 teaspoons curry powder, and 2 teaspoons kosher salt.

Hand rub the mix on chicken and place on sheet pan.

In a separate bowl, mix 1 teaspoon curry powder, 1 tablespoon olive oil, the rest of the yogurt, the thyme, ½ teaspoon kosher salt, pepper.

Put cut up cauliflower & grapes in big-ass bowl and mix in the curry mix.

Once mixed, place on the sheet pan all around the chicken.

Roast for 40 minutes, turning after 20.
