Shelli’s Quarantine Cooking Meatloaf Recipe
(My husband John loves this with roasted potatoes)
Ingredients:
1 pound chopped turkey
1 pound 90% lean ground beef
1 pound chopped pork
2 beaten eggs
5 cloves chopped garlic
1 whole chopped sweet onion
1 large chopped sweet red pepper
2 large celery stalks, chopped
1 teaspoon salt
1/s teaspoon pepper
½ cup ketchup
A little less than 1 cup panko bread crumbs
4 teaspoons Emeril’s Baby Bam or Emeril’s Southwest rub
Directions:
Pre heat oven to 375.
Pam up 2 bread loaf pans.
In a big-ass bowl, mix all indredients by hand.
Divide evenly in two pans.
Bake 45-50 minutes or til 165 degrees.
Drain fat from both pans.
Refrigerate 1 to re-heat the next day- always better 2nd day.
Freeze the other.
