Try Shelli Sonstein's 'Eazy Peazy' Banana Bread Recipe

This Eazy Peazy Banana Bread is a perfect way to wake your kids up for the (home) school day!

Start by pre-heating your oven to 325 degrees.

Then mix the following together on slow speed:

  • 2 ripe bananas (brown is best). You can use green bananas if you heat in oven at 300 degrees for 30 min.
  • 2 eggs at room temp
  • 1 ¾ cups all purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup oil (safflower supposedly healthiest)
  • ¼ cup butter milk.(to make on our own mix ¾ cupmilk with two tablespoons ofwhite vinegar)
  • 1 teaspoon vanilla extract

Bake in a greased loaf pan. I prefer using Pam oil spray.

Bake for one hour and 20 minutes (check at 1:15 by inserting a knife. If it comes out clean, it’s done).

Enjoy it hot or with a spread. It also freezes beautifully if you're not ready to indulge.
